Berry Cobbler

We have a great group of friends that get together once a month in the summer and eat delicious food.  Each month is a different theme but it all has to be cooked in the dutch oven.   Cobblers are very popular in dutch ovens but I admit I am not a huge fan.   You see I have this texture issue.  If anything is slimy or squishy I  have a very hard time swallowing and not throwing up.  Sorry, maybe that's too much info. Cobbler is one of those slimy, squishy things for me.  IF I have to make one I just made a crisp, mmm...so much better. This time I found this recipe and it was completely homemade.  Most cobblers are made with cake mixes and pops and I think that's where the texture issue starts.  Anyways, I decided that I needed to give this one a chance. Mint Juleps (non-alcoholic)

I know, I know, this is a major no no to some of you but let me explain.  Well I guess there is not much to explain except that my husband loves "drinks" (seriously when we go to restaurants he drinks at least 6 different flavors of lemonade before our meal comes out) and we don't drink alcoholic beverages so this leads me to finding creative ways to make yummy, delicious drinks for him. This particular one started about 9 years ago.  We were in the middle of law school (and by that I mean really my hubby was going to school but I was doing all the behind the scenes stuff like cleaning the house, making food, taking care of 3 kids, so really he couldn't of done school with out me--any one else with me on this?!!?).  He had a group of would-be attorneys that got together with their wives monthly to eat dinner and unwind.   One of them, Steve, loved mint juleps.  Every time we got together, he had an ice cold pitcher of mint juleps waiting for us--oh was it heaven...

Homemade Peanut Butter Cup Ice Cream

Mrs. Stanger, this one's for you! I think I have shared before how much my hubby likes ice cream.  He would eat a bowl of it everyday for the rest of his life if he could.  Unfortunately that has rubbed off on the kids too.   Some days I feel like all I do is make food.  We have breakfast, snack, lunch, snack, dinner, snack.  Is that how it goes at your house too? Well because of this ice cream obsession at our house, my kids think that that before bedtime snack should be some form of ice cream.  They will take it anyway: in a bowl, in a shake, on a cone, or probably right out of the container if I would let them. I try to discourage it as much as possible but when the 4 year old breaks out in tears it's pretty hard to resist.  I think if I was denied this ice cream I would probably break out in tears too (I know, I know I said I didn't like ice cream all that much but this lovely little creation has chocolate AND peanut butter in it so were all good!)...

Hey I have a Facebook page now, come check it out!  Oh wow!  I think summer has finally showed up in Idaho, yeah! One of my favorite things to do is sit on my deck watching the kids play while I drink an ice cold diet coke and read a book--I know, I'm multitasking, but what mother doesn't? I've mentioned before that I love diet coke and it's all my mother's fault!  Sorry Mom but it's true and not a bad thing, right? I especially love diet coke on a hot afternoon.  Lounging on the deck and drinking, ahhh...life couldn't get much better in my book!  The other thing I love on hot afternoons is not using my oven.  If I can get away with not turning it on at all, it's a good day at our house because that means I found some other way to cook dinner or a new recipe that doesn't involve the oven.  I am always trying things on the grill or using the crockpot (I stick it in my garage). Oatmeal Butterscotch Bars

Hope all of you had a great day yesterday with some delicious food.  We tried a couple new recipes that I will share later because today I want to share these little pieces of heaven. Since spring is past and I never got around to cleaning out my cupboards like I wanted to (spring cleaning is so overrated!), I figured should at least go through my kitchen cupboards and see what I had forgotten about.  It's not like I have that many cupboards it's just that I'm not 7 feet tall and can't see at the back of the top shelf, anybody with me on that? In the process I found 2 cans of key lime pie filling and 6 bags of butterscotch chips that I seriously couldn't believe I didn't know about it? How could I forget about that.  Thank goodness nothing was expired because I think I would of sat down and cried about those butterscotch chips.
